Recipe:
I used a dairy free Greek style yogurt (Plain), seasoned lightly with salt and pepper and thinner out with a little water. This replaced the egg-wash in my traditional recipe.  Corn Starch (Add a Pinch If Salt & Pepper) Instead is Flour and GF Panko Bread Crumbs...

Slice Eggplant into 1/4” Rounds. 
- You can Peel or Leave Skin On
Dip in Corn Starch
Dip in Dairy Free Yogurt 
Dip in Panko (Press Firmly Into Panko so Eggplant is Completely Coated)

Pan Fry Until Golden or Place on Baking Sheet and Spray with Non-Stick Cooking Spray or Drizzle with Vegetable Oil and Bake (400 degrees) Until Golden.

Place in a Pan, Cover woth Your Favorite Sauce & Top with a Dairy Free Vegan Based Mozzarella that you Love!  Bake Until Cheese Melts and Sauce is Bubbky and Hot!  Garnish with some Fresh Chopped Parsley and Serve!
